Ingredients:

  • 1 pound ground beef or pork
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, sliced
  • 1 bell pepper, chopped
  • 1 cup chicken or vegetable broth
  • 1 cup diced tomatoes (canned or fresh)
  • 1 cup diced apricots (fresh or dried)
  • 1 cup diced apples
  • 1 teaspoon smoked paprika
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions:

  1. In a large bowl, combine ground meat, breadcrumbs, Parmesan cheese, egg, garlic, oregano, salt, and pepper. Mix until well combined and form into small meatballs.
  2. In a large pot, heat olive oil over medium heat. Add meatballs and cook until browned on all sides, about 5-7 minutes. Remove meatballs and set aside.
  3. In the same pot, add onion, carrots, and bell pepper. Sauté until the vegetables are softened, about 5 minutes.
  4. Add the broth, diced tomatoes, apricots, apples, and smoked paprika to the pot. Stir to combine.
  5. Return the meatballs to the pot and bring the mixture to a simmer. Cover and cook for 20-25 minutes, until the meatballs are cooked through and the flavors meld together.
  6. Serve hot, garnished with fresh parsley.
