Ingredients:

  • 1 pound ground beef or pork
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh basil
  • 1 egg
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 2 cups fresh strawberries, hulled and halved
  • 1 cup beef or vegetable broth
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • Fresh basil leaves for garnish

Instructions:

  1. In a large bowl, combine ground meat, breadcrumbs, Parmesan cheese, chopped basil, egg, garlic powder, salt, and pepper. Mix until well combined.
  2. Roll the mixture into meatballs, about 1 inch in diameter.
  3. In a large skillet, heat olive oil over medium heat. Add the meatballs and cook until browned on all sides, about 5-7 minutes. Remove and set aside.
  4. In the same skillet, add the halved strawberries, broth, balsamic vinegar, honey, black pepper, and red pepper flakes. Bring to a simmer and cook for about 5 minutes, until the strawberries soften.
  5. Return the meatballs to the skillet, cover, and let simmer for another 10 minutes, allowing the flavors to meld.
  6. Serve hot, garnished with fresh basil leaves.
