Savory Meatloaf with Ground Beef and Pork

Ingredients:

  • 1 lb ground beef
  • 1 lb ground pork
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup breadcrumbs
  • 2 large eggs
  • 1/2 cup milk
  • 1/4 cup ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • 1/4 cup balsamic vinegar
  • 1/4 cup ketchup (for glaze)

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, sauté the chopped onion and minced garlic over medium heat until soft and translucent. Set aside to cool.
  3. In a large mixing bowl, combine the ground beef, ground pork, breadcrumbs, eggs, milk, cooked onion and garlic, Worcestershire sauce, parsley, thyme, salt, pepper, and smoked paprika. Mix until just combined.
  4. Transfer the meat mixture into a greased loaf pan, shaping it into a loaf.
  5. In a small bowl, mix together the balsamic vinegar and ketchup for the glaze. Spread evenly over the top of the meatloaf.
  6. Bake in the preheated oven for about 1 hour, or until the internal temperature reaches 160°F (70°C).
  7. Allow the meatloaf to rest for 10 minutes before slicing. Serve warm.
