Ingredients:

  • 1 lb minced beef
  • 1 large red onion, finely chopped
  • 2 cups broccoli florets
  • 2 medium potatoes, peeled and sliced thinly
  • 1 large red bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup beef broth
  • 1 cup shredded cheese (optional)

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add the chopped red onion and minced garlic, sautéing until translucent.
  3. Add the minced beef to the skillet and cook until browned. Season with oregano, paprika, salt, and pepper.
  4. Stir in the broccoli and red bell pepper, cooking for an additional 5 minutes until the vegetables are slightly tender.
  5. Pour in the beef broth and bring the mixture to a simmer, allowing it to cook for another 5 minutes.
  6. In a greased baking dish, layer half of the sliced potatoes at the bottom.
  7. Spread the beef and vegetable mixture evenly over the potatoes.
  8. Top with the remaining potato slices, overlapping them slightly. Season the top with salt and pepper.
  9. If desired, sprinkle shredded cheese over the top.
  10. Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the potatoes are golden brown and tender.
  11. Let it cool for a few minutes before serving.
