Ingredients:

  • 4 large bell peppers (any color)
  • 1 pound minced beef or pork
  • 1 cup cooked rice (white or brown)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1 tablespoon tomato paste
  • 1 cup diced tomatoes (canned or fresh)
  • 1/2 cup shredded cheese (cheddar or mozzarella)
  • Salt and pepper to taste
  • Olive oil for sautéing
  • Fresh parsley for garnish

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Lightly brush the outside with olive oil and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic, sauté until softened.
  4. Add the minced meat to the skillet, cooking until browned. Season with oregano, paprika, salt, and pepper.
  5. Stir in the cooked rice, tomato paste, and diced tomatoes. Mix well and simmer for about 5 minutes.
  6. Remove from heat and stir in half of the shredded cheese.
  7. Stuff each bell pepper with the minced meat mixture, pressing down gently to pack it in.
  8. Place the stuffed peppers in a baking dish and cover with foil. Bake for 25 minutes.
  9. Remove the foil, sprinkle the remaining cheese on top, and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
  10. Garnish with fresh parsley before serving.
