Ingredients:

  • 2 cups short-grain sushi rice
  • 2 1/2 cups water
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 2 tablespoons white miso paste
  • 1 ripe avocado, diced
  • 1 tablespoon sesame seeds
  • Nori sheets, cut into strips (for wrapping)
  • 2 green onions, finely chopped

Instructions:

  1. Rinse the sushi rice under cold water until the water runs clear. Drain well.
  2. In a medium pot, combine the rinsed rice and water. Bring to a boil, then reduce the heat to low, cover, and simmer for 18-20 minutes until the rice is tender and the water is absorbed.
  3. In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Stir this mixture into the cooked rice along with the miso paste, and let it cool slightly.
  4. Once the rice is cool enough to handle, wet your hands with water to prevent sticking. Take a small handful of rice and flatten it in your palm.
  5. Place a few pieces of diced avocado and a sprinkle of green onions in the center of the rice, then mold the rice around the filling to form a ball or triangle shape.
  6. Roll the rice balls in sesame seeds for added flavor and texture. Optionally, wrap with a strip of nori for easy handling.
  7. Serve immediately or refrigerate for a few hours. Enjoy your delicious rice balls as a snack or light meal!
