Ingredients:

  • 2 cups all-purpose flour
  • 1 large egg
  • 1/2 teaspoon salt
  • 1/2 cup water
  • 1 tablespoon olive oil
  • 1 cup mushrooms, finely chopped
  • 1 cup fresh spinach, chopped
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon butter
  • Sour cream for serving (optional)

Instructions:

  1. In a large bowl, mix the flour and salt. Create a well in the center and add the egg, water, and olive oil. Mix until a dough forms, then knead on a floured surface for about 5 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.
  2. Meanwhile, in a skillet, melt the butter over medium heat. Add the onion and garlic, sautéing until translucent. Add the mushrooms and cook until they release their moisture and begin to brown. Stir in the spinach and cook until wilted. Season with salt and pepper, then set aside to cool.
  3. Roll out the dough on a floured surface to about 1/8 inch thick. Use a round cutter to cut out circles about 3 inches in diameter.
  4. Place a teaspoon of the mushroom and spinach filling in the center of each circle. Fold over and pinch the edges to seal tightly, ensuring no filling escapes.
  5. Bring a large pot of salted water to a boil. Cook the pierogi in batches for about 3-4 minutes, or until they float to the surface. Remove with a slotted spoon and drain.
  6. Serve warm, topped with sour cream if desired.
