Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 2 large eggs
  • 1 medium onion, finely chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon baking powder
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 2 tablespoons butter, melted
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano

Instructions:

  1. Preheat your oven to 375°F (190°C) and grease a muffin tin.
  2. In a skillet, melt 1 tablespoon of butter over medium heat. Add the chopped onion and sauté until they are translucent and slightly caramelized, about 5-7 minutes. Set aside to cool.
