Ingredients:

  • 1 pre-made pie crust (or gluten-free crust)
  • 1 cup fresh spinach, chopped
  • 1/2 cup pine nuts, toasted
  • 4 large eggs
  • 1 cup heavy cream
  • 1 cup shredded cheese (such as Gruyère or cheddar)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
  4. In a mixing bowl, whisk together the eggs, heavy cream, salt, pepper, and nutmeg until well combined.
  5. Stir in the sautéed spinach and onion mixture, shredded cheese, and toasted pine nuts into the egg mixture.
  6. Pour the filling into the pre-made pie crust, spreading it evenly.
  7. Bake in the preheated oven for 35-40 minutes, or until the quiche is set and the top is golden.
  8. Allow to cool for a few minutes before slicing. Serve warm or at room temperature.
