Ingredients:

  • 500g pork mince
  • 250g mushrooms, chopped
  • 1 medium head of cauliflower, cut into florets
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1/2 cup grated cheese (optional for topping)
  • Fresh parsley for garnish

Instructions:

  1. Preheat your oven to 180°C (350°F).
  2. Steam the cauliflower florets until tender, about 10 minutes. Set aside.
  3. In a large skillet, heat olive oil over medium heat. Add onion and garlic, sautéing until translucent.
  4. Add the pork mince to the skillet, breaking it apart with a wooden spoon. Cook until browned.
  5. Stir in the chopped mushrooms, thyme, paprika, salt, and pepper. Cook until mushrooms are softened.
  6. In a large mixing bowl, combine the steamed cauliflower with the pork mixture, mixing gently to combine.
  7. Transfer the mixture to a baking dish, spreading it evenly. If using, sprinkle grated cheese on top.
  8. Bake in the preheated oven for 20-25 minutes or until the top is golden and bubbly.
  9. Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley before serving.
