Ingredients:

  • 1 pound pork tenderloin, sliced
  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth
  • 1 red bell pepper, diced
  • 1 zucchini, diced
  • 1 carrot, sliced
  • 1 cup broccoli florets
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. In a medium saucepan, combine quinoa and vegetable broth. Bring to a boil, then reduce heat, cover, and simmer for about 15 minutes or until quinoa is fluffy and liquid is absorbed.
  2. While the quinoa cooks, heat olive oil in a large skillet over medium-high heat. Add the sliced pork tenderloin and season with salt, pepper, smoked paprika, and dried thyme. Cook until browned and cooked through, about 5-7 minutes.
  3. Add the garlic, red bell pepper, zucchini, carrot, and broccoli to the skillet. Sauté for another 5-7 minutes until the vegetables are tender but still crisp.
  4. Once the quinoa is ready, fluff it with a fork and divide it among serving bowls. Top each bowl with the pork and vegetable mixture.
  5. Garnish with fresh parsley before serving.
