Ingredients:

  • 400g pork sausage, casings removed
  • 1 courgette, diced
  • 200g fresh spinach, chopped
  • 1 carrot, grated
  • 1 leek, sliced
  • 100g rhubarb, chopped
  • 200ml condensed milk
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions:

  1. Preheat the oven to 180°C (350°F).
  2. In a large skillet, heat olive oil over medium heat. Add the sliced leek and sauté until softened, about 3-4 minutes.
  3. Add the diced courgette and grated carrot to the skillet, cooking for another 5 minutes until they start to soften.
  4. Stir in the chopped spinach and cook until wilted, about 2 minutes.
  5. In a separate bowl, mix the pork sausage with the chopped rhubarb, salt, and pepper. Form the mixture into small meatballs.
  6. In a baking dish, layer the cooked vegetables, then place the sausage meatballs on top.
  7. Pour the condensed milk evenly over the dish to add creaminess.
  8. Cover the dish with foil and bake for 25-30 minutes. Remove the foil and bake for an additional 10 minutes until the sausage is cooked through and slightly browned.
  9. Let it cool for a few minutes before serving.
