Ingredients:

  • 4 pork sausages
  • 2 medium courgettes, sliced
  • 2 cups fresh spinach, chopped
  • 1 medium carrot, grated
  • 1 leek, sliced
  • 1/2 cup condensed milk
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • 1/2 cup grated cheese (optional)

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add the sliced leeks and sauté until softened, about 3-4 minutes.
  3. Add the grated carrot and cook for another 2 minutes. Then, stir in the chopped spinach and cook until wilted.
  4. In a separate pan, cook the pork sausages until browned and cooked through. Remove from heat and slice into bite-sized pieces.
  5. In a large mixing bowl, combine the sautéed vegetables, sliced sausages, sliced courgettes, condensed milk, thyme, garlic powder, salt, and pepper. Mix until well combined.
  6. Transfer the mixture to a greased baking dish. If desired, sprinkle grated cheese on top.
  7. Bake in the preheated oven for 25-30 minutes, or until the courgettes are tender and the top is golden brown.
