Ingredients:

  • 1 lb pork tenderloin
  • 1 cup mushrooms, sliced
  • 2 carrots, julienned
  • 2 tablespoons BBQ sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons butter
  • 1 cup black beans, cooked
  • 1/2 cup beef broth
  • 1/2 cup vegetable broth
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, mix the BBQ sauce and soy sauce. Marinate the pork tenderloin in this mixture for at least 30 minutes.
  3. In a large skillet, melt butter over medium heat. Add sliced mushrooms and carrots, sautéing until softened, about 5-7 minutes.
  4. Remove the vegetables from the skillet and set aside. In the same skillet, sear the marinated pork tenderloin for 2-3 minutes on each side until browned.
  5. Add the cooked black beans, beef broth, and vegetable broth to the skillet with the pork. Bring to a simmer.
  6. Transfer the skillet to the preheated oven and roast for 15-20 minutes, or until the pork reaches an internal temperature of 145°F (63°C).
  7. Remove from the oven and let the pork rest for 5 minutes before slicing.
  8. Serve the sliced pork tenderloin topped with the mushroom-carrot medley and black beans.
