  • 2 cups whole wheat flour

  • 1/2 cup unsalted butter, cold and cubed
  • 6-8 tablespoons ice water
  • 2 large potatoes, thinly sliced
  • 1 cup shredded cheese (e.g., Gruyère or cheddar)
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper to taste
  • 1 egg (for egg wash, optional)

Instructions:

  1. In a bowl, combine the whole wheat flour and salt. Add the cold butter and mix until the mixture resembles coarse crumbs.
  2. Gradually add ice water, one tablespoon at a time, mixing until the dough forms a ball. Wrap in plastic wrap and refrigerate for 30 minutes.
