Ingredients:

  • 2 medium potatoes, diced
  • 1 medium sweet potato, diced
  • 1 cup pumpkin, cubed
  • 2 medium tomatoes, diced
  • 1 large onion, sliced
  • 2 steaks (beef), cut into strips
  • 2 eggs
  • 1/2 cup milk
  • 2 slices of bread, torn into pieces
  • 2 tablespoons butter
  • Salt to taste
  • Pepper to taste

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, melt 1 tablespoon of butter over medium heat. Add the sliced onion and sauté until translucent.
  3. Add the diced potatoes, sweet potato, and pumpkin to the skillet. Season with salt and pepper, and cook for about 10 minutes, stirring occasionally, until they start to soften.
  4. In the same skillet, push the vegetables to the side and add the steak strips. Season with salt and pepper, and cook until browned on all sides, about 5-7 minutes.
  5. In a mixing bowl, whisk together the eggs and milk. Add a pinch of salt and pepper.
  6. In a greased baking dish, combine the sautéed mixture with the diced tomatoes and torn bread. Pour the egg and milk mixture over the top, making sure it’s evenly distributed.
  7. Dot the remaining butter on top and bake in the preheated oven for about 25-30 minutes, or until the top is golden and the vegetables are tender.
