Ingredients:

  • 2 cups cooked rice
  • 1 medium pumpkin, peeled and diced
  • 2 large potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup vegetable broth
  • 1/2 cup grated cheese (optional, for topping)
  • Fresh parsley for garnish

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sautéing until soft and fragrant.
  3. Add the diced pumpkin and potatoes to the skillet. Stir in thyme, paprika, salt, and pepper. Cook for 5-7 minutes until the vegetables start to soften.
  4. In a large baking dish, combine the cooked rice and the sautéed pumpkin and potato mixture. Pour the vegetable broth over the top and mix well.
