Ingredients:

  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth or water
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 red bell pepper, diced
  • 1 small red onion, diced
  • 1 cup corn, fresh or frozen
  • 1 avocado, diced
  • 1 lime, juiced
  • 1/4 cup fresh cilantro, chopped
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • Olive oil for drizzling

Instructions:

  1. In a medium saucepan, combine the quinoa and vegetable broth (or water). Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and the liquid is absorbed.
  2. In a large bowl, combine the black beans, red bell pepper, red onion, corn, and avocado.
  3. Once the quinoa is cooked, fluff it with a fork and let it cool slightly before adding it to the bowl with the vegetables.
  4. Add lime juice, chopped cilantro, cumin, paprika, salt, and pepper to the mixture. Gently toss to combine all ingredients.
  5. Drizzle with olive oil before serving. Enjoy warm or chilled.
