Ingredients:

  • 1 cup cooked quinoa
  • 1 cup canned chickpeas, drained and rinsed
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped bell pepper
  • 2 cloves garlic, minced
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/4 cup chopped fresh parsley
  • 1 egg, beaten (or flax egg for vegan option)
  • 1/4 cup whole wheat flour (or gluten-free flour)
  • Olive oil for frying

Instructions:

  1. In a large bowl, mash the chickpeas with a fork or potato masher until mostly smooth.
  2. Add cooked quinoa, onions, bell pepper, garlic, cumin, paprika, black pepper, salt, parsley, and the beaten egg to the mashed chickpeas. Mix until well combined.
  3. Gradually add whole wheat flour to the mixture until it holds together but is not too dry.
  4. Form the mixture into small patties, about 2-3 inches in diameter.
  5. Heat a non-stick skillet over medium heat and add a little olive oil. Once hot, add the patties in batches, cooking for about 3-4 minutes on each side or until golden brown.
  6. Remove from the skillet and place on a paper towel to absorb excess oil. Serve warm or at room temperature.
