Ingredients:

  • 1 cup cooked quinoa
  • 1 tablespoon olive oil
  • 1/2 cup diced bell peppers
  • 1/2 cup spinach
  • 1/4 cup cherry tomatoes, halved
  • 1 egg
  • 1/2 avocado, sliced
  • 2 tablespoons crumbled feta cheese
  • Salt and pepper to taste
  • Fresh herbs (like parsley or cilantro) for garnish

Instructions:

  1. In a skillet, heat olive oil over medium heat. Add bell peppers and sauté for 3-4 minutes until softened.
  2. Add spinach and cherry tomatoes to the skillet, cooking for an additional 2-3 minutes until spinach is wilted.
