Ingredients:

  • 2 cups cooked rice
  • 4 oz salami, diced
  • 1 medium onion, finely chopped
  • 2 eggs
  • 2 tablespoons oil (vegetable or olive)
  • 1 can diced tomatoes, drained
  • Salt and pepper to taste
  • Optional: chopped parsley for garnish

Instructions:

  1. In a large skillet or wok, heat the oil over medium heat. Add the chopped onion and sauté until translucent and slightly caramelized.
  2. Add the diced salami to the skillet and cook until it starts to crisp up.
  3. Push the onion and salami to one side of the skillet. Crack the eggs into the skillet and scramble them until fully cooked.
  4. Add the cooked rice and drained diced tomatoes to the skillet. Stir everything together, breaking up any clumps of rice.
  5. Season with salt and pepper to taste. Continue to stir-fry for another 3-5 minutes until heated through.
