Ingredients:

  • 1 lb fresh salmon, skin removed and chopped
  • 1/4 cup breadcrumbs (or almond flour for gluten-free)
  • 1/4 cup finely chopped red onion
  • 2 cloves garlic, minced
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon lemon juice
  • Salt and pepper to taste
  • 2 tablespoons olive oil (for frying)
  • 1 ripe avocado
  • 1 tablespoon lime juice
  • Salt to taste
  • 4 whole grain or gluten-free burger buns
  • Lettuce leaves (for serving)
  • Tomato slices (for serving)

Instructions:

  1. In a mixing bowl, combine the chopped salmon, breadcrumbs, red onion, garlic, Dijon mustard, dill, parsley, lemon juice, salt, and pepper. Mix until just combined.
  2. Form the mixture into 4 equal-sized patties.
  3. Heat olive oil in a skillet over medium heat. Cook the salmon patties for about 4-5 minutes on each side, or until golden brown and cooked through.
  4. While the patties are cooking, prepare the avocado-lime sauce by mashing the avocado in a bowl and mixing in lime juice and salt until smooth.
  5. To assemble the burgers, place a lettuce leaf on the bottom half of each bun, add a salmon patty, a generous dollop of avocado-lime sauce, and top with tomato slices. Place the top half of the bun on each burger.
  6. Serve immediately with your choice of sides.
