Ingredients:

  • 1 pound shaved beef
  • 8 ounces mushrooms, sliced
  • 2 medium potatoes, diced
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh sage, chopped
  • 2 tablespoons olive oil
  • 1 onion, diced
  • Salt and pepper to taste
  • 1/2 cup beef broth
  • Optional: fresh parsley for garnish

Instructions:

  1. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced potatoes and cook until golden brown and crispy, about 10-12 minutes. Stir occasionally.
  2. Meanwhile, in another skillet, heat the remaining tablespoon of olive oil. Add the diced onion and sauté until translucent, about 5 minutes.
  3. Add the sliced mushrooms to the onion and cook until they are soft and browned, about 5-7 minutes.
  4. Stir in the shaved beef, thyme, and sage, cooking until the beef is browned, about 3-5 minutes. Season with salt and pepper.
  5. Pour in the beef broth and let it simmer for another 3-4 minutes until slightly thickened.
  6. Serve the beef and mushroom mixture over the crispy potatoes, garnished with fresh parsley if desired.
