Ingredients:

  • 1 pound shaved beef
  • 8 ounces mushrooms, sliced
  • 4 medium potatoes, diced
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 2 tablespoons fresh thyme, chopped
  • 1 tablespoon fresh sage, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, cooking until softened and fragrant, about 3-5 minutes.
  2. Add the sliced mushrooms to the pot and sauté until they are golden brown, about 5-7 minutes.
  3. Stir in the shaved beef, cooking until browned, about 3-4 minutes. Season with salt and pepper.
  4. Add the diced potatoes, beef broth, thyme, and sage to the pot. Bring the mixture to a boil.
  5. Reduce the heat to low, cover the pot, and let it simmer for 30-35 minutes, or until the potatoes are tender.
