Ingredients:

  • 1 pound chicken feet, cleaned and trimmed
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 1 tablespoon sesame oil
  • 3 slices fresh ginger
  • 3 cloves garlic, smashed
  • 2 star anise
  • 1 teaspoon Sichuan peppercorns
  • 2 green onions, chopped
  • 4 cups chicken broth
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)
  • Salt and pepper to taste

Instructions:

  1. In a large pot, combine chicken feet, soy sauce, rice vinegar, sugar, sesame oil, ginger, garlic, star anise, Sichuan peppercorns, and chicken broth.
  2. Bring the mixture to a boil over medium-high heat, then reduce to a simmer.
  3. Cover and let simmer for about 1.5 to 2 hours, or until the chicken feet are tender and flavorful.
  4. Remove the chicken feet from the pot and set aside.
  5. Strain the broth to remove the solids, then return to the pot.
  6. Stir in the cornstarch mixture to thicken the broth, cooking for an additional 5 minutes.
  7. Season the broth with salt and pepper to taste.
  8. Serve the chicken feet in bowls, ladling the thickened broth over them, and garnish with chopped green onions.
