Ingredients:

  • 1 cup rice
  • 1/3 cup split urad dal (black gram)
  • 1/4 cup cooked spinach, chopped
  • 1/2 cup grated cheese (such as cheddar or mozzarella)
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon salt
  • Water, as needed
  • Oil or ghee for cooking

Instructions:

  1. Soak the rice and urad dal in water for at least 4 hours or overnight.
  2. Drain the soaked rice and dal, and blend them together with cumin seeds and enough water to form a smooth batter.
  3. Transfer the batter to a bowl, cover, and let it ferment in a warm place for 8-12 hours until it has risen and is bubbly.
  4. Once fermented, gently fold in the chopped spinach and salt.
  5. Heat a non-stick skillet or tawa over medium heat and lightly grease it with oil or ghee.
  6. Pour a ladleful of batter onto the skillet and spread it into a thin circle. Cook for 2-3 minutes until the bottom is golden brown.
  7. Sprinkle a portion of grated cheese on one half of the dosa, fold it over, and cook for another minute until the cheese melts.
  8. Remove from the skillet and repeat with the remaining batter and filling.
  9. Serve hot with coconut chutney or sambar.
