Ingredients:

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup cold water
  • 2 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon black pepper
  • 1 egg, beaten (for egg wash)

Instructions:

  1. In a bowl, mix the flour and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
  2. Gradually add cold water, mixing until the dough comes together. Wrap in plastic wrap and refrigerate for at least 30 minutes.
  3. In a skillet, heat olive oil over medium heat. Sauté garlic until fragrant, then add spinach and cook until wilted. Remove from heat and let cool.
  4. In a bowl, combine ricotta, mozzarella, Parmesan, sautéed spinach, oregano, and black pepper. Mix well.
  5. Preheat the oven to 400°F (200°C).
  6. Roll out the chilled dough on a floured surface to about 1/8 inch thick. Cut into rectangles about 4x6 inches.
  7. Place a spoonful of the spinach and cheese mixture on one half of each rectangle. Fold the other half over and seal the edges with a fork.
  8. Brush the tops with beaten egg for a golden finish.
  9. Place on a baking sheet lined with parchment paper and bake for 20-25 minutes, or until golden brown.
  10. Let cool before freezing or serve warm.
