Ingredients:

  • 2 cups fresh spinach, chopped
  • 1 cup feta cheese, crumbled
  • 1 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 3 large eggs
  • 1 cup milk
  • 1/4 cup olive oil
  • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
  • 1 tablespoon fresh parsley, chopped (or 1 teaspoon dried parsley)

Instructions:

  1. Preheat the oven to 375°F (190°C) and grease a muffin tin or line with paper liners.
  2. In a large bowl, combine the all-purpose flour, whole wheat flour, baking powder, salt, black pepper, and garlic powder.
  3. In another bowl, whisk together the eggs, milk, and olive oil until well combined.
  4. Stir the chopped spinach, crumbled feta, dill, and parsley into the wet ingredients.
  5. Pour the wet mixture into the dry ingredients and gently fold until just combined. Do not overmix.
  6. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake for 20-25 minutes or until the tops are golden and a toothpick inserted into the center comes out clean.
  8. Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
  9. Once cooled, freeze any muffins you won't eat within a few days for later enjoyment.
