Ingredients:

  • 2 large eggs
  • 1 cup fresh spinach, chopped
  • 1/4 cup feta cheese, crumbled
  • 1 whole wheat tortilla
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional: diced tomatoes or avocado for garnish

Instructions:

  1. In a skillet, heat olive oil over medium heat. Add chopped spinach and sauté until wilted, about 2-3 minutes.
