Ingredients:

  • 6 large eggs
  • 1 cup fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup milk (or dairy-free alternative)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon garlic powder
  • 1/4 cup diced bell pepper (optional)
  • Cooking spray or oil for greasing

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease a muffin tin with cooking spray or oil.
  2. In a large bowl, whisk together the eggs, milk, salt, pepper, oregano, and garlic powder until well combined.
  3. Fold in the chopped spinach, feta cheese, and diced bell pepper if using.
