Ingredients:

  • 2 ribeye steaks
  • 2 medium sweet potatoes
  • 1 cup mushrooms, sliced (such as cremini or button)
  • 1 medium onion, diced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon fresh thyme or rosemary (optional)
  • Butter for finishing (optional)

Instructions:

  1. Peel and dice the sweet potatoes, then boil them in salted water until tender, about 15-20 minutes.
  2. While the potatoes are boiling, heat 1 tablespoon of olive oil in a skillet over medium-high heat. Season the steaks with salt and pepper.
  3. Sear the steaks for 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from the skillet and let them rest for 5 minutes.
  4. In the same skillet, add the remaining olive oil and sauté the diced onion until translucent, about 3-4 minutes. Add the sliced mushrooms and garlic, cooking until the mushrooms are browned and tender.
  5. Once the sweet potatoes are cooked, drain and return them to the pot. Mash them and mix in the sautéed mushroom mixture. Season with salt, pepper, and fresh herbs if using.
  6. Serve the rested steak alongside the garlic mushroom sweet potato mash, adding a pat of butter on top of the steak for richness if desired.
