Ingredients:

  • 4 large bell peppers (any color)
  • 1 pound ground beef
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 cup celery, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup cooked rice (optional, for added texture)
  • 1 cup shredded cheese (optional, for topping)
  • Fresh parsley for garnish

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Set aside.
  3. In a large skillet, heat a little oil over medium heat. Add the diced onion and celery, and sauté until softened, about 5 minutes.
  4. Add the minced garlic and cook for another minute until fragrant.
  5. In the same skillet, add the ground beef and cook until browned, breaking it apart with a spoon. Drain any excess fat.
  6. Stir in the diced tomatoes, oregano, cumin, paprika, salt, and pepper. If using, also add the cooked rice. Mix everything well and let it simmer for about 5 minutes.
  7. Stuff each bell pepper with the beef mixture, packing it in tightly. Place the stuffed peppers in a baking dish.
  8. If desired, sprinkle shredded cheese on top of each stuffed pepper.
  9. Cover the baking dish with foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 10-15 minutes, until the peppers are tender and the cheese is bubbly.
  10. Garnish with fresh parsley before serving.
