  • 2 medium sweet potatoes, peeled and diced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 cup fresh spinach, chopped
  • 6 large eggs
  • 1/4 cup milk (or a dairy-free alternative)
  • 1/2 cup feta cheese, crumbled
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Fresh herbs (like parsley or chives) for garnish

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, toss the diced sweet potatoes with olive oil, salt, and pepper. Spread them on a baking sheet and roast for about 20 minutes or until tender.
  3. In a mixing bowl, whisk together the eggs, milk, smoked paprika, garlic powder, salt, and pepper until well combined.
