Ingredients:

  • 1 cup Arborio rice
  • 2 cups cooked turkey, shredded
  • 1 cup diced ham
  • 1 cup mushrooms, sliced (such as cremini or shiitake)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup white wine
  • 1/2 cup grated Parmesan cheese
  • 3 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. In a saucepan, heat the chicken broth over low heat and keep it warm.
  2. In a large skillet, heat olive oil over medium heat. Add the onion and garlic, sautéing until softened, about 5 minutes.
  3. Add the mushrooms, cooking until browned and tender, about 5 more minutes.
  4. Stir in the Arborio rice, allowing it to toast for about 2 minutes while stirring frequently.
  5. Pour in the white wine and cook until mostly absorbed.
  6. Begin adding the warm chicken broth one ladle at a time, stirring constantly. Wait until the liquid is mostly absorbed before adding the next ladle. Continue this process until the rice is creamy and al dente, about 18-20 minutes.
  7. Incorporate the shredded turkey and diced ham during the final few minutes of cooking, allowing them to heat through.
  8. Stir in the Parmesan cheese, dried thyme, and rosemary. Season with salt and pepper to taste.
  9. Remove from heat and let sit for a minute. Serve garnished with fresh parsley.
