Ingredients:

  • 4 large bell peppers (any color)
  • 1 pound ground turkey
  • 1 cup cooked quinoa
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup diced tomatoes (canned or fresh)
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded cheese (optional)
  • Fresh parsley or cilantro for garnish

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Place them upright in a baking dish.
  3. In a skillet over medium heat, sauté the diced onion and minced garlic until the onion is translucent.
  4. Add the ground turkey to the skillet, cooking until browned and fully cooked. Drain any excess fat.
  5. Stir in the cooked quinoa, diced tomatoes, cumin, smoked paprika, salt, and pepper. Mix until well combined and heated through.
  6. Spoon the turkey and quinoa mixture into each bell pepper, packing it down gently.
  7. If using, sprinkle shredded cheese on top of each stuffed pepper.
  8. Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender.
  9. Garnish with fresh parsley or cilantro before serving.
