Ingredients:

  • 1 lb ground turkey
  • 1 lb frozen mixed vegetables
  • 1 can creamed corn (15 oz)
  • 1/2 cup lentils, rinsed
  • 1 cup chicken or vegetable broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the ground turkey and cook until browned, about 5-7 minutes.
  3. Stir in the garlic powder, onion powder, paprika, thyme, oregano, salt, and pepper. Cook for another 2 minutes until fragrant.
  4. Add the frozen mixed vegetables, creamed corn, lentils, and chicken broth to the skillet. Mix well to combine.
  5. Transfer the mixture to a greased baking dish and spread evenly.
  6. Cover with aluminum foil and bake for 30 minutes. Then remove the foil and bake for an additional 15-20 minutes, or until the lentils are tender and the top is slightly golden.
