Ingredients:

  • 2 cups all-purpose flour
  • 1 cup grated carrots
  • 1/2 cup plain yogurt
  • 2 large eggs
  • 1/4 cup sugar
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup butter, melted
  • 1 cup fresh strawberries, hulled and quartered
  • 1/4 cup water
  • 1 tablespoon lemon juice

Instructions:

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, whisk together the flour, baking soda, baking powder, and salt.
  3. In another bowl, mix the grated carrots, yogurt, eggs, and melted butter until well combined. Stir in the sugar.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Pour the batter into the prepared loaf pan and smooth the top. Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
  6. While the bread is baking, prepare the strawberry compote by combining the strawberries, water, and lemon juice in a small saucepan. Cook over medium heat until the strawberries break down and the mixture thickens, about 10 minutes.
  7. Once the bread is done, let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  8. Serve slices of the bread topped with the warm strawberry compote.
