Ingredients:

  • 1 lb ground beef
  • 1 lb ground pork
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 carrot, finely diced
  • 1 celery stalk, finely diced
  • 2 cans (14 oz each) crushed tomatoes
  • 1/2 cup red wine
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp red pepper flakes
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. In a large skillet or saucepan, heat the olive oil over medium heat. Add the onion, garlic, carrot, and celery, cooking until softened, about 5 minutes.
  2. Add the ground beef and ground pork to the pan, breaking it up with a spoon. Cook until browned, about 7-10 minutes.
  3. Pour in the red wine, scraping the bottom of the pan to deglaze. Let it simmer for about 3-4 minutes until the alcohol evaporates.
  4. Stir in the crushed tomatoes, oregano, basil, and red pepper flakes. Season with salt and pepper.
  5. Bring the mixture to a simmer, then reduce the heat to low and let it cook for at least 30 minutes, stirring occasionally. The longer it simmers, the better the flavors meld.
  6. Serve over your choice of pasta or polenta, and garnish with fresh parsley.
