Ingredients:

  • 2 lbs boneless pork ribs
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup couscous
  • 1 1/4 cups chicken broth
  • 1 tablespoon lemon juice
  • Fresh parsley, chopped for garnish

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a small bowl, mix the smoked paprika, garlic powder, onion powder, salt, and pepper.
  3. Rub the spice mixture evenly over the pork ribs.
  4. In a large oven-safe skillet, heat the olive oil over medium-high heat. Sear the pork ribs on all sides until browned, about 3-4 minutes per side.
  5. Remove the ribs from the skillet and set aside. In the same skillet, add the sliced bell peppers and sauté for about 5 minutes until they start to soften.
  6. Return the pork ribs to the skillet, placing them on top of the bell peppers.
  7. Pour the chicken broth around the ribs and cover the skillet with a lid or foil. Bake in the preheated oven for 1.5 hours or until the ribs are tender.
  8. While the ribs are baking, prepare the couscous. In a medium saucepan, bring the chicken broth to a boil. Stir in the couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork.
  9. Stir in lemon juice into the couscous and season with salt and pepper to taste.
  10. Once the ribs are done, serve them over the couscous, topped with the sautéed bell peppers and a sprinkle of fresh parsley.
