Ingredients:

  • 2 pounds boneless pork ribs
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup couscous
  • 1 1/4 cups chicken broth
  • 1 tablespoon lemon juice
  • Fresh parsley, for garnish

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a small bowl, mix smoked paprika, garlic powder, onion powder, oregano, salt, and pepper.
  3. Rub the spice mixture all over the pork ribs, ensuring they are well coated.
  4. In a large oven-safe skillet, heat olive oil over medium-high heat. Sear the pork ribs on all sides until browned, about 3-4 minutes per side.
  5. Remove the ribs from the skillet and set aside. In the same skillet, add the sliced bell peppers and sauté for about 5 minutes until they are tender.
  6. Return the pork ribs to the skillet, and pour in the chicken broth. Cover with a lid or foil and transfer to the oven.
  7. Bake for 1 hour, or until the pork is tender and fully cooked.
  8. While the pork is baking, prepare the couscous. In a medium saucepan, bring 1 1/4 cups of chicken broth to a boil. Stir in the couscous, remove from heat, cover, and let it sit for 5 minutes.
  9. Fluff the couscous with a fork and stir in lemon juice.
  10. Serve the pork ribs on a bed of couscous, topped with the sautéed bell peppers, and garnish with fresh parsley.
