Ingredients:

  • 1 pound ground beef (80/20 blend)
  • 4 slices American cheese
  • 4 large portobello mushrooms, stems removed
  • 1 cup breadcrumbs
  • 1 cup all-purpose flour
  • 2 large eggs
  • Salt and pepper to taste
  • 4 hamburger buns
  • Lettuce leaves
  • Tomato slices
  • Pickles
  • Ketchup
  • Mustard
  • Mayonnaise

Instructions:

  1. Preheat your fryer or a deep pot with oil to 350°F (175°C).
  2. In a bowl, season the ground beef with salt and pepper, then form into four equal patties.
  3. Dredge each portobello mushroom in flour, dip in beaten eggs, and then coat with breadcrumbs. Set aside.
  4. In a skillet, cook the beef patties over medium-high heat for about 3-4 minutes on each side, or until they reach your desired doneness. Place a slice of American cheese on each patty during the last minute of cooking to melt.
  5. While the patties are cooking, fry the breaded portobello mushrooms in the hot oil until golden brown and crispy, about 3-4 minutes. Remove and drain on paper towels.
  6. To assemble, place a beef patty on the bottom half of each bun, followed by a fried portobello mushroom. Top with lettuce, tomato, pickles, and your choice of condiments. Finish with the top half of the bun.
  7. Serve immediately and enjoy your homemade Shack Stack!
