Ingredients:

  • 1 lb minced lamb
  • 1 onion, finely chopped
  • 2 carrots, diced
  • 1 cup frozen peas
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper, to taste
  • 2 large sweet potatoes, peeled and cubed
  • 2 tablespoons butter
  • 1/4 cup milk
  • 1/2 cup shredded cheddar cheese

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet, cook the minced lamb over medium heat until browned. Drain excess fat.
  3. Add the chopped onion and garlic to the skillet, cooking until softened.
  4. Stir in the diced carrots, peas, tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper. Cook for 5-7 minutes until the vegetables are tender.
  5. In a separate pot, boil the sweet potatoes until soft, about 15 minutes. Drain and return to the pot.
  6. Add butter and milk to the sweet potatoes, mashing until smooth. Season with salt and pepper.
  7. Spread the lamb mixture evenly in a baking dish, then top with the sweet potato mash. Sprinkle with shredded cheddar cheese.
  8. Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden.
  9. Let it cool for a few minutes before serving.
