Ingredients:

  • 4 chicken breasts, cut into strips
  • 2 bell peppers, sliced (any color)
  • 1 red onion, sliced
  • 1 lime, sliced
  • 2 tablespoons Siete chicken fajita seasoning
  • 1 tablespoon Siete lemon pepper fajita seasoning
  • 1 teaspoon paprika
  • 1 cup Mexican blend cheese
  • Fresh cilantro, for garnish
  • Siete almond flour tortillas
  • Salsa, for serving
  • Guacamole, for serving

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. On a sheet pan, combine the chicken strips, sliced bell peppers, and sliced red onion.
  3. Sprinkle the chicken and vegetables with Siete chicken fajita seasoning, Siete lemon pepper fajita seasoning, and paprika. Toss everything together to coat evenly.
  4. Arrange the lime slices in the center of the pan.
  5. Bake in the preheated oven for about 25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  6. Remove the pan from the oven and squeeze the roasted lime juice over the chicken and vegetables.
  7. Sprinkle the Mexican blend cheese over the top and return to the oven for an additional 3 minutes, or until the cheese is melted.
  8. Garnish with fresh cilantro before serving.
