Ingredients:

  • 4 bone-in, skin-on chicken thighs
  • 2 cups refried beans (canned or homemade)
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 chipotle pepper in adobo sauce, minced
  • 1 tablespoon adobo sauce (from the chipotle can)
  • 1 lime, juiced
  • 1 cup chicken broth
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)

Instructions:

  1. Season the chicken thighs with salt, pepper, cumin, and smoked paprika.
  2. In a slow cooker, place the diced onion and minced garlic at the bottom.
  3. Layer the seasoned chicken thighs on top of the onion and garlic.
  4. In a bowl, mix the refried beans, chipotle pepper, adobo sauce, lime juice, and chicken broth until well combined.
  5. Pour the refried bean mixture over the chicken in the slow cooker.
  6. Cover and cook on low for 6-8 hours or on high for 4-5 hours, until the chicken is tender and cooked through.
  7. Once cooked, shred the chicken directly in the slow cooker and stir to combine with the beans.
