Ingredients:

  • 3-4 pounds corned beef brisket
  • 1 onion, quartered
  • 3 cloves garlic, smashed
  • 4 cups beef broth
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon whole black peppercorns
  • 2 bay leaves
  • 3-4 large carrots, cut into chunks
  • 1 pound baby potatoes, halved
  • 1/4 cup honey
  • 1/4 cup Dijon mustard
  • 1 tablespoon fresh thyme, chopped
  • Salt to taste

Instructions:

  1. Place the onion, garlic, and beef brisket into the slow cooker.
  2. Pour in the beef broth and apple cider vinegar, then add the peppercorns and bay leaves.
  3. Cover and cook on low for 8-10 hours or until the meat is tender.
  4. In the last hour of cooking, add the carrots and potatoes to the slow cooker.
