Ingredients:

  • 2 cups smoked chicken, shredded
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 1 onion, chopped
  • 4 cups vegetable stock
  • 1 cup milk
  • 1 cup mushrooms, sliced
  • 1/4 cup all-purpose flour
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions:

  1. In a large microwave-safe bowl, heat the olive oil and onion for 2 minutes until softened.
  2. Add the diced carrots and celery to the bowl and microwave for an additional 3 minutes.
  3. Stir in the sliced mushrooms and microwave for another 2 minutes.
  4. In a separate bowl, whisk together the flour and a small amount of the vegetable stock to create a slurry.
  5. Add the shredded smoked chicken to the vegetable mixture, followed by the remaining vegetable stock and the milk.
  6. Stir in the flour slurry, mixing well to combine. Season with salt and pepper to taste.
  7. Cover the bowl with a microwave-safe lid or plastic wrap, leaving a small vent, and microwave on high for 10-12 minutes, or until the soup is heated through and thickened.
  8. Serve hot, garnished with fresh parsley if desired.
