Ingredients:

  • 2 medium yams, peeled and diced
  • 1 cup fresh spinach, chopped
  • 150g smoked fish, flaked
  • 2 tablespoons palm oil
  • 1 teaspoon salt
  • 1 cube Maggi seasoning
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon black pepper
  • 1 tablespoon lemon juice

Instructions:

  1. Boil the diced yams in salted water until tender, about 15-20 minutes. Drain and set aside.
  2. In a large skillet, heat palm oil over medium heat. Add the chopped onion and garlic, sautéing until translucent.
  3. Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes.
  4. Stir in the flaked smoked fish, cooked yams, salt, Maggi seasoning, and black pepper. Mix gently until combined and heated through.
  5. Finish with a splash of lemon juice for brightness. Serve warm, garnished with extra spinach if desired.
