Ingredients:

  • 8 oz smoked sausage, sliced
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 can (7 oz) sliced mushrooms, drained
  • 1 medium onion, chopped
  • 8 oz rotini pasta
  • 2 cups chicken broth
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Parmesan cheese, for serving (optional)

Instructions:

  1. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  2. Add the sliced smoked sausage to the skillet and cook until browned, about 5-7 minutes.
  3. Stir in the minced garlic, Italian seasoning, salt, and pepper, cooking for an additional minute until fragrant.
  4. Add the canned diced tomatoes (with juice), sliced mushrooms, chicken broth, and rotini pasta to the skillet. Stir to combine.
  5. Bring the mixture to a boil, then reduce heat to low. Cover and simmer for about 12-15 minutes, or until the pasta is cooked al dente and most of the liquid is absorbed, stirring occasionally.
  6. Once cooked, taste and adjust seasoning if necessary. Serve hot, topped with Parmesan cheese if desired.
