Ingredients:

  • 2 chicken breasts
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoky paprika
  • 1 large onion, sliced
  • 4 eggs
  • Black pepper to taste
  • Salt to taste
  • Olive oil

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix garlic powder, onion powder, smoky paprika, salt, and black pepper. Rub this mixture all over the chicken breasts.
  3. In a skillet, heat a tablespoon of olive oil over medium heat. Add the sliced onions and sauté until they are soft and caramelized, about 10-15 minutes.
  4. In a baking dish, spread the caramelized onions as a base, and place the seasoned chicken breasts on top.
  5. Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through (internal temperature of 165°F/75°C).
  6. Remove the chicken from the oven and crack the eggs on top of the chicken and onions.
  7. Return to the oven and bake for an additional 5-7 minutes, or until the eggs are set to your liking.
  8. Serve warm, garnished with additional black pepper if desired.
