Ingredients:

  • 1 lb smoked sausage, sliced
  • 4 medium potatoes, diced
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the sliced smoked sausage to the skillet and cook until browned, about 5-7 minutes.
  3. Remove the sausage from the skillet and set aside.
  4. In the same skillet, add the chopped onions and cook until translucent, about 3-4 minutes.
  5. Add the minced garlic and cook for an additional minute until fragrant.
  6. Stir in the diced potatoes, smoked paprika, dried thyme, salt, and pepper. Cook, stirring occasionally, for about 15-20 minutes, or until the potatoes are tender and golden brown.
  7. Return the browned sausage to the skillet and mix well. Cook for another 5 minutes to heat through.
  8. Garnish with fresh parsley before serving.
